If you have sufficient light on the light sensor then  you should be able to see a difference in the light sensor reading when a car goes by.  Adding a black spot to the car and/or setting up a lamp across from the light sensor will improve your ability to gather data.
Upload a few trials and see how well the cars are counted.
If the car goes in front of the light sensor for less time than the data logging interval then it may not be registered.

For a  program that saves the dip in light sensing reading, it does not matter what time a car passes the light.
This kind of program should keep a better car count.
